Summer in a Cake: Brownie with a Mascarpone Frosting, Strawberries and Mint

Let’s be honest, who doesn’t love some chocolaty goodness in their life? This one in particular is so easy to make and it’s one of the best cakes I had all year!

For approx. 12 pieces you’ll need:

(for the brownie base)

  • 120g flour
  • 250g sugar
  • 85g unsweetened cocoa powder
  • 225g melted butter
  • 4 eggs
  • a pinch of salt

(for the frosting)

  • 200g mascarpone
  • 200g quark (or curd)
  • 3 packets of vanilla sugar
  • 250g strawberries (or any berries of your liking)
  • a bit of mint leaves

Preheat your oven on 160°C on air circulation

Mix all the dry brownie ingredients (flour, sugar, cocoa, salt) in a bowl, add in the melted butter and stir together with an electric mixer. Once everything is combined, add the eggs one at a time and mix again until smooth. Line your baking dish with baking paper and pour in the batter. Leave it in the oven for approx. 12 minutes until the brownie is still a little bit soft when you touch it. It’s okay if there’s a little bit of batter left when you poke it with a toothpick, but it shouldn’t be runny.

In the meantime you can prepare the frosting, mix the mascarpone and quark in a bowl and add your vanilla sugar. Stir everything with a spoon until smooth and than add your frosting evenly on top of the now cooled down brownie.

Wash your strawberries, remove the green bits and cut them in half. Then you can decorate you cake with the berries and add some of the mint leaves on top. Le fin. Easy as pie. ♥
