Lovely people of the internet,
today I want to tell you about my recent discovery on my way to eat healthier. I’ve never been a huge fan of fish, I do like my occasional sushi (either fried Inside Out ones or really simple Makis), but otherwise I’m not much of a fish-lover. However, as I wanted to change my diet a bit to the healthier side, I grabbed the salmon at the counter and mixed it with stuff I still had at home. Well, I gotta say that it was quiet a tasty affair.
For my fresh salmon with lemon, tomato and onion marinade you’ll need:
500 g salmon filets
a couple of cherry tomatoes
1/2 an onion
some herbs (I used a mix of frozen Italien herbs, but fresh ones, such as Thyme, rosemary, parsley or basil would be even better)
1 clove of garlic
a bit of chili
- Cut your onion and garlic into fine pieces, add the herbs, chili and 2 tablespoons of olive oil and mix everything together into a bowl. Rinse your salmon under cold water and dab it dry. Preheat your oven to 200C.
- Take your tinfoil and start to fold a little bag for the salmon, cover the bottom with your herbal mixture, put the salmon filet and again cover it with the rest of your mixture. Then cut your lemon and add the pieces on top of everything, drizzle some olive oil on top (make sure to drizzle it everywhere, especially on the sides, so that the salmon doesn’t dry out) and close you little bag of fish tightly.
- Bake the salmon for 25 minutes in your preheated oven. Take your package out of the oven, but ensure that you won’t open it for another 5 minutes to let it cool down a bit. I served it with mashed potatoes, but that’s just what I fancied that day.
